When you select a Log Note in the Log Editor, one of the things you can do from the right-click menu is edit the note. A note is edited on the dialog above, which is much like the dialog used to define the note in the first place. Changes made to this note will apply to this use of the note on this log, and will not affect the note as used elsewhere.
